The M&S café on Princes Street that does proper coffee and surprisingly decent food right in the thick of tourist central.

You wouldn't necessarily think to head into M&S for a coffee break whilst battling the Princes Street crowds, but their café tucked inside the flagship store is actually a proper respite from the shopping madness outside. The coffee's reliably good, and they've got a decent selection of sandwiches, cakes, and light lunches that go well beyond the usual high street fare.
What makes it work is the location – you're right in the heart of everything with views towards the Castle, but you're not paying Castle-adjacent prices for a mediocre flat white. It's particularly handy if you're already doing the Princes Street shopping circuit and need somewhere reliable to recharge. The seating area gets busy during lunch and weekend shopping sprees, but it moves quickly enough that you won't be hovering over tables like a vulture.
