The meat arrives sliced and fanned across your plate, pink throughout if you've got any sense, with a pot of their signature dripping chips that actually taste like potatoes. The room's all exposed brick and industrial fixtures, busy without being chaotic. Staff know their stuff and don't oversell – they'll tell you straight that medium-rare is the way, then leave you to it.
