You'll find this tucked into a basement unit on Deansgate, where the pared-back interior puts all the focus on what's coming out of the kitchen. The menu reads like a love letter to British produce handled with serious skill – think Jerusalem artichoke with aged parmesan and hazelnuts, or slow-cooked beef short rib that falls apart at first touch. The portions are designed for sharing, which works brilliantly when everything tastes this good. The wine list skews natural without being preachy about it, and the service strikes that perfect balance of knowledgeable without being stuffy. Book ahead – the dining room is small and word's definitely out about what they're doing here.
