You're walking down Temple Bar on a Friday night and The Auld Dubliner pulls you in with its warm wooden interior and the sound of a fiddle already in full swing. This isn't some theme park version of an Irish pub—it's got the bones of the real thing, with cosy snugs, dark timber and that lived-in atmosphere that comes from actual locals mixing with visitors. The kitchen does proper Irish comfort food (think steak and Guinness pie, fish and chips that don't mess about), the Smithwick's flows reliably, and there's live traditional music most nights that actually feels organic rather than performed at you. Fair warning: Temple Bar location means it gets rammed, especially weekends, but that's kind of the point.
