You're walking up the Royal Mile, knackered from the cobbles, and suddenly you're sat in Amber with views that make you remember why you moved to Edinburgh in the first place. The room itself is all warm wood and that particular kind of old-building cosiness you can't manufacture—stone walls, proper lighting, the kind of place where locals actually book a table instead of just tourists stumbling in. The food is reassuringly Scottish without getting poncy about it: think expertly done venison, seafood that hasn't travelled halfway round the world, and puddings that remind you why comfort food matters. But the real draw is the whisky list, which is genuinely overwhelming in the best way—over 350 drams, and the staff actually know what they're talking about rather than just reciting tasting notes.
