Brasserie Prince

You're walking into the kind of room that makes you sit up straighter—all dark wood panelling and that particular Edinburgh grandeur that comes from being slap bang on Princes Street. Brasserie Prince is the Balmoral's main restaurant, and it's got the confidence of a place that doesn't need to try too hard. The menu leans into Scottish produce with real intent: think langoustines, venison, seafood from the lochs and coasts done without faffing about. Service is genuinely attentive without being stuffy, which is harder to pull off than it sounds.
