Head down Rodney Street in Leith and you'll find yourself in proper third-wave coffee territory. Hata takes its craft seriously—the kind of place where they'll chat about bean origin and extraction times if you're into it, but won't make you feel daft if you just want a really good flat white. The space itself feels lived-in rather than designed, with the sort of unfussy aesthetic that comes from actually caring about what matters: the coffee and the food. Their breakfast and brunch stuff gets proper attention, and it shows.
