Head down to Braid Road in the quieter bits of south Edinburgh and you'll find yourself in a place that feels genuinely local—the kind of café where regulars have their order sorted before they reach the counter. It's unpretentious but competent, which is rarer than you'd think. The coffee's handled seriously (you can tell they care about the roast), and the pastries and light bites actually justify a visit beyond your caffeine fix. You're not paying through the nose, either, which helps when you're tempted to become a regular yourself.
