Cail Bruich (Scottish Gaelic for 'eat well') doesn't shout about itself, but once you're inside this intimate spot, the cooking speaks volumes. Chef Chris Charalambous has earned his Michelin star by doing something refreshingly straightforward: taking brilliant Scottish ingredients and treating them with real technique and imagination, without any of the pretension you'd find in Edinburgh's fine dining scene. The room itself is warm and unpretentious—the kind of place where locals actually want to eat, not somewhere you feel you need permission to be.
