The LAB (Laboratory, innit) does that rare thing of being genuinely skilled at what it does without the theatre or ego. Order a classic and they'll nail it; ask for something off-menu and they'll actually listen rather than sigh. The crowd's a proper mix: after-work drinkers, serious cocktail folk, and folk who just want a decent pint that happens to be in a place where the bartenders know their stuff.
