You're on Broadway Market on a Friday night and the place is heaving. Chakana pulls off something tricky: it feels both genuinely neighbourhood and properly accomplished. The menu reads like someone's actually been to Peru and cared enough to get it right—ceviches that are zingy and alive, anticuchos with char and spice, causa that isn't just mashed potato faffing about. There's proper pisco here too, not just shoved in a cocktail for show. Service moves at the right pace, staff actually know what they're talking about, and it never gets so polished you can't relax.
