You walk into COYA and immediately get that sense of occasion—the kind of place where the staff know what they're doing and the room has proper energy without being loud. It's peruvian cooking done at a high level, all clean flavours and technique, the sort of spot you'd take someone when you actually want to impress them. The cocktail list leans heavily into pisco, which is the right call, and the ceviches alone justify the trek to Mayfair. It's not cheap, but then again nothing on Piccadilly is.
