You're in Soho, and you've just walked into controlled carnivore chaos. Fogo de Chão does one thing and does it obsessively well: they bring skewered meat to your table, keep it coming until you physically cannot move, and let you control the pace with a little red and green disc. The salad bar alone—which you'll hit between meat rounds—is genuinely impressive, stacked with the kind of fresh stuff that makes you feel vaguely virtuous before the next parade of picanha arrives. It's the kind of place where you go in hungry and leave slightly delirious, which is exactly the point.
