Sagardi's whole thing is grilled meat and fish cooked over charcoal, which sounds simple until you taste how they've actually mastered it. The txuleta (that's a proper rib-eye to you) arrives with nothing but sea salt, still smoking, and it's genuinely one of the best steaks you'll eat in East London. The wine list leans heavily Basque, naturally, and they know what pairs with what.
