Stowell Street's got its usual suspects, but 12Muqam cuts through the noise with authentic Uyghur cuisine that doesn't apologise or simplify itself for a Newcastle crowd. The hand-pulled noodles arrive properly chewy, coated in fiery chilli oil and proper lamb, while the rice pilaf comes scattered with chunks of meat and dried fruit that actually know what they're doing together. It's the kind of place where the kitchen's doing exactly what it wants, and you're better off for it.
