You're on Hoe Street heading past the usual suspects, then you spot it—a clean-lined Japanese spot that actually knows what it's doing. Inside, it's all warm lighting and counter seating where you can watch the cooks work. Order the tonkotsu (naturally) and you'll get a rich, milky pork bone broth that's been simmered properly, none of that watered-down nonsense. The noodles have proper bite, the toppings are generous, and they do brilliant sides too. It's the kind of place that makes you realise Walthamstow's food scene has actually got some proper depth these days.
