You're walking up St. Helen's Square, that proper Georgian bit near the city centre, and you push through the door of what looks like a proper old York townhouse. Inside, it's all exposed stone and candlelight—elegant without trying too hard. Impossible York takes the plant-based thing seriously, but it doesn't lecture you about it. The kitchen does interesting things with vegetables and pulses, the kind of cooking that makes you forget you're not eating meat. It's the sort of place locals bring their mates who claim they need proper food, and then everyone's surprised when dinner's actually memorable.
